Crepes, a recipe shared by Rita Dube

French crepes are thin and delicate pancakes that can be filled with anything you like, such as fresh fruit, chocolate sauce, and whipped cream, according to AllRecipes and other sources.

Ingredients

1 Cup flour

1 Cup milk

4 eggs

1 tsp. vanilla extract

A pinch of salt

Butter

Directions

Mix all ingredients in a blender or with a mixer until the batter is smooth. Heat skillet and add 1/2 Tbsp. butter. When the butter is melted, pour 1/4 to 1/3 cup of batter into the pan and immediately swirl the batter around in the pan to cover the bottom. Cook until the edges are brown and little bubbles form on top. Flip over and cook other side. You can tell when it’s done when bubbles stop forming and it looks dry.

If the batter seems too thick, add a little more milk. If batter seems a little thin, add more flour.

This recipe makes about a dozen medium crepes.

TIP: Let batter stand overnight for a smoother batter.

Crepes can be eaten for breakfast with syrup, butter, jam or confectioners/brown sugar.

They can also be filled with seafood, chicken a la king, or vegetables for a main course.

For a crepe dessert, fill with fresh berries and cream or chocolate sauce.
